We asked the craftsman who continues to make such a sturdy colander for professional use to make a small colander that is easy to use for home use, while keeping most of the sturdiness and production methods unchanged.
The material used, “Hachiku bamboo”, has lower nodes than Madake bamboo, making it easier to split lengthwise and more flexible.
The finish is very sturdy, more than enough for a colander of this size, made to the specifications of a craftsman who makes colanders for professional use. This is a small size. Good for placing approximately 100g (3.53oz) of noodles.This is a medium size. Good for placing 150g (5.3oz) to 200g (7.06oz) of noodles.This is the large size.Good for placing 200g (7.06oz) to 300g (10.6oz) of noodles.
This colander was made in consultation with a craftsman as a “bread plate”. It is perfect for toasted bread, baguettes, sandwiches, bagels, etc.
When bread is heated, steam escapes through the weaving of the this plate, preventing the bottom of the bread from getting steamy.
It is also very useful for noodles such as Soba, Sōmen, Udon, and Rāmen, Rice balls, Sushi rolls, and other rice dishes. For fried foods such as tempura, fried potatoes, and deep-fried chickens, and as a serving dish to put ingredients in a pot.
Unless there are oil stains on it, there is no need to put detergent on it. After use, wash the plate in water with a scrubbing brush. Shake it or tap the reverse side lightly, then drain well and dry it in a well-ventilated place.
