This is a perforated drop lid made from Kiso sawara, perfect for simmered dishes.
The standing tree looks similar to Hinoki(Japanese Cypress), but as a wood it is softer, easier to handle, lighter, and more water-resistant than Hinoki.
Sawara gently absorbs moisture and has a more subdued scent compared to hinoki. Its mild character makes it well suited for use with food, and it has long been favored for items like rice tubs and wooden rice containers.
A drop lid made from sawara helps retain heat and distributes it evenly over the ingredients, thanks to its gentle weight and natural properties.
Available in six sizes, ranging from 14cm to 24cm in diameter (approx. 5.51″ to 9.45″). Please check the size of your pot and choose the one that fits best.
This lid is made from a round wooden board with a fitted crossbar that serves as a handle.The handle is securely inset into the surface of the board.Because sawara wood does not conduct heat easily, you can safely touch the handle with bare hands even while cooking. The lid features about ten small holes. These allow simmering liquid to circulate through, helping to prevent boil-over.The lid is approximately 0.39″ thick. It rests on the ingredients with a gentle weight—firm enough to hold things in place without crushing them.There is a slight taper to the side: the top and bottom differ in diameter by about 0.08″.As shown in the photo, minor marks,dents, small chips, or fine scratches may be present. These are part of the natural character of the material and the handmade process, and are not considered defects.The lid allows simmering liquid to circulate across the surface, so even a small amount of broth is enough to gently infuse flavor into the ingredients.

Here, koya-dofu (freeze-dried tofu) is rehydrated in hot water, gently rinsed, and cut into bite-sized pieces. The tofu is then added to a pot of simmering broth made from dashi, soy sauce, mirin, and sake.
Cover with the drop lid and simmer over medium-low heat for about 7 minutes. Add green beans toward the end, and once they are cooked through, it’s ready to serve.
The lid also helps prevent simmering liquid from evaporating too quickly, and keeps ingredients from bouncing around and falling apart during cooking.
For best results, choose a drop lid that is slightly smaller than the diameter of your pot. In this example, we paired an 18cm (7.09″) perforated drop lid with a 21cm (8.27″) Yukihira pot. *A 20cm (7.87″) lid will just barely fit, but since the wood can expand with moisture, there is a risk it may become difficult to remove. For this reason, we chose a slightly smaller size.

To prevent odors from strong-smelling ingredients like fish from clinging to the surface, we recommend moistening the entire lid with water before use.
